Black bean and salsa quinoa, with roasted okra, tomatoes, and onions.
I’d never eaten okra before, but a friend brought me some from her garden. I tossed it in olive oil, salt, and pepper, mixed in a fresh tomato and onions, and roasted it at 425F for about 15 minutes. My verdict was that it’s pretty tasty.

Sometimes I get really excited about lunch.
A tomato from our garden, broccoli and carrots with homemade hummus, a gala apple, sunflower seeds, and a mug of Lady Grey.
It’s seventy-nine degrees here today, so I ate on the porch and looked at our wildflower guide. For me, it’s just starting to feel like summer…good think I still have a few more weeks before term starts.

Sunday morning pancakes with Nathan. (The pancake recipe is from Betty Crocker, but I modified it a bit to make them thicker.)

1 1/4 cups flour, 1 egg, 3/4 cup almond milk, 1 T baking powder, 1/2 teaspoon salt, 2 T oil, 1 T sugar.

Each one was different - there were walnuts, blueberries, Andes mints, chocolate chips, white chocolate chips, and then honey and jam.

And finally, I was able to make myself food. Just a really simple potato soup with a couple boiled potatoes, some soy milk, some margarine, a pinch of flour, salt and pepper, topped with thyme.
I can’t wait until I can eat more than just soup and applesauce, then I’ll make some more exciting stuff again!
